Maahi Kabab

Recipe name :Maahi Kabab

Preparation Time : Less then 20 mins

Cooking Time : 1 :45 hour

Ingredients:

  • 1 whole salmon or cod  fish
  • 1/2 cup extra-virgin olive oil
  • 1/ cup fresh lime juice
  • 50 grams coriander
  • 1/2 tsp saffron
  • 50 grams parsley
  • 50 grams fresh mint
  • 1/2 tbs salt
  • 1/4 tsp black pepper

Method:

  1. Cut fish length-wise from below. Remove insides, then wash inside and out, and dry thoroughly.
  2. Place each side under grill at high temperature for 5-10 minutes so that the skin dries up. Remove fish and separate skin which should come off easily.
  3. Prepare sauce as following: wash and finely chop coriander, parsley and mint. Add lime juice, olive oil, saffron, salt, and black pepper, and mix well. Cover a suitable pan with aluminum foil and place fish on top.
  4. Add the sauce on both sides as well as inside.
  5. Cover with a sheet of aluminum foil and cook in oven at medium temperature for 45 minutes to one hour.

Note : However, the exact cooking time depends on the type and size of fish. Take care not to over-cook. Add more sauce 2 or 3 times during cooking. When cooked, decorate fish with slices of lime or lemon and some parsley.

Chicken paillards with tomato-orange sauce

Recipe Name : Chicken paillards with tomato-orange sauce

Preparation Time : Less then 20 mins

Cooking Time : 45 mins

Ingredients :

  • 8 skinless, boneless chicken breast halves
  • 3 tsp olive oil
  • 1/2 tsp coarse salt
  • 1/2 tsp black pepper
  • 1 finely chopped garlic clove
  • 15 ounces tomatoes
  • 1 cup chicken stock
  • 1/2 cup chopped pitted black olives
  • 1 tbs chopped fresh thyme

Method :

  1. Remove any pieces of fat along the edges of the chicken breasts.
  2. Put one breast between two sheets of strong plastic wrap. With a meat pounder or the bottom of a heavy skillet, pound the meat several times.
  3. Pound the remaining breasts in the same way, using fresh plastic wrap when it tears. Rub the chicken all over with 1 tablespoon of the oil. Sprinkle with the salt and pepper.
  4. In a 12-inch nonstick skillet, heat 1 tablespoon oil. When it is hot, add several of the paillards and cook them for 1 minute per side over high heat.
  5. Remove the chicken from the pan, heat the remaining 1 tablespoon oil, and cook the remaining pieces in the same way. Set them aside. Add the garlic, tomatoes, stock, olives, orange rind, and thyme to the pan. Bring the mixture to a boil, reduce the heat to low, and simmer, stirring occasionally, for 5 minutes.
  6. Return the chicken to the pan, overlapping the pieces, and cook over medium-low heat for 10 minutes, or until they are all cooked through, moving the paillards on the bottom to the top halfway through cooking.

Jooje Kabab

Recipe Name :Jooje Kabab

Preparation Time : Less then 15 mins

Cooking Time : 45 mins

Ingredients :

  • 1 kg chicken
  • 1/2 cup extra-virgin olive oil
  • 2 large onions
  • 1/4 tsp saffron
  • 4 medium tomato
  • 1/2 tsp salt
  • 2 tbs fresh lime juice
  • 1/4 tsp black pepper

Method:

  1. Mix olive oil, grated onions, saffron, salt, black pepper and lime juice. Wash and cut chicken into small pieces, then remove the skin.
  2. Marinate overnight (or at least for several hours) in refrigerator.
  3. The container should be covered. Thread chicken on long, thin metal skewers.
  4. Thread leg and thigh pieces, wings and breast pieces separately, as breast requires slightly less cooking. Also thread whole tomatoes separately on another skewer. Brush with marinade.
  5. Barbeque for about 5-10 minutes on each side, turning frequently. Joojeh Kabab can also be prepared in the oven.
  6. Prepare chicken as before, pre-heat the grill to a high temperature, and place just under the grill, again turning frequently.

Minty beef kebabs

Recipe Name :Minty beef kebabs

Preparation Time : 20 mins

Cooking Time : 1 Hour

Ingredients:

  • 1 1/2 cup minced beef
  • 1 onion, chopped
  • 3 cardamoms
  • 1 tbsp ginger/garlic paste
  • 2 tbsp mint leaves, chopped
  • 2 tsp coriander seeds
  • 2 tsp cumin seeds
  • 3 cloves
  • 6 black peppers
  • 1/2 tsp salt

Method:

  1. Pre-heat pan and fry coriander, cumin, cloves, cardamom and black pepper until they turn a shade darker and release a roasted aroma.
  2. Grind the spices. In a bowl mix ginger/garlic paste, minced meat, ground spices, mint leaves, onion and salt.
  3. Make kebab in sausagelike shapes and put on skewers.
  4. Barbecue over a pre-heated grill for 15 minutes, turning the skewers occasionally.

Beef with Orange Curry

Recipe Name: Beef with Orange Curry

Preparation Time : 20 to 30 mins

Cooking Time :1 :30 hour

Ingredients:

  • 450 gms boneless beef, cut into three fourth inch cubes
  • 2 cup beef stock
  • 2 tbsp curry powder
  • 1 tbsp oil
  • 1 tbsp ginger/garlic paste
  • 2 tbsp coriander leaves, chopped
  • 4 oranges
  • 2 tsp cornflour
  • 8 oz onion, roughly chopped
  • Salt to taste
  • Black pepper for taste

Method:

  1. Heat oil in a pan.
  2. Gently fry onions, ginger/garlic paste and beef cubes for five minutes, stirring occasionally, until the beef is brown.
  3. Add curry powder and stock to beef and mix thoroughly. Bring to a boil and then cover the ingredients and let them simmer for one hour.
  4. Grate the rind of one orange. Extract the juice from the orange as well as the other one.
  5. Peel the other two oranges, removing their pith.
  6. Slice between each segment and remove the flesh.
  7. Blend cornflour with the orange juice. Add orange rind to the beef along with the cornflour.
  8. Bring to a boil and let it simmer, stir for five minutes until the sauce thickens.
  9. Season to taste and stir in the orange flesh.

Beef with Orange Curry is ready.
