Soda Bread
Recipe name: Soda Bread
Preparation Time : Less then 20 mins
Cooking Time : up to 45 mins
Ingredients:
- 4 tbp butter
- ½ cup sugar
- 4 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 cup currants
- ½ tsp salt
- 2 large eggs
- 1½ cups buttermilk
Method:
- Butter a cookie sheet. Heat oven to 350 degrees F. In a large bowl beat butter and sugar together to combine. Add eggs, one at a time, beating well after each additition.
- In a medium bowl whisk flour, baking powder, baking soda, and salt to combine.
- Beginning and ending with flour mixture alternately add flour and buttermilk, beating well after each addition. Stir in currants.
- On a generously flourered hard surface knead the dough about 4 minutes until smooth and not sticky, adding flour as needed.
- Form into 7½-inch round. Transfer to prepared cookie sheet. Etch an x in the top of the loaf.
- Bake about 1 hour 10 minutes or until it sounds hollow when tapped on. Move to a rack to cool completely before slicing.

Chicken Makhani
Recipe Name:Chicken Makhani
Preparation Time : Less then 20 mins
Cooking Time : 1 hour and 30 mins
Ingredients:
- 700gms whole chicken
For marinade
- salt
- 1 cup vinegar
- 2-1/2 tsp red chilli powder
- 1 cup yoghurt
- 2 tbsp ginger/garlic paste
For gravy
- 50gms butter
- 30 gms khoya
- 2 tbsp ginger/garlic paste
- 30 gms cashew nuts, ground
- 500 gms tomatoes, blanched, peeled and chopped
- 8 gms turmeric powder
- 2 1/2 tsp red chilli powder
- 3 gms all spices
- 1 cup cream
Method:
- Make slits on the chicken.
- Rub marinade all over it and keep aside for at least 15 minutes.
- Put it on the skewer and grill for 15 minutes.
- Let it rest for 10 minutes and then grill again for 10 minutes.
- Cut into small pieces and keep aside.
- To prepare the gravy, heat butter in a saucepan and sauté ginger/garlic paste on a slow flame until it begins to turn brown.
- Add khoya and cashew paste.
- Stir in remaining ingredients except cream and cook for 20 minutes.
- Stir in cream on low heat to make thick gravy.
- Add chicken and cook for 10 minutes.
Lancashire Hotpot

Cooking Time : 45 mins
Ingredients :
- 1 Sliced Large Parsnip
- 8 Sliced Large Chops
- 1 Ounce Butter
- 1/4 Cup Flour
- 2 Large Chopped Onion
- 2 Chopped Stalks Celery
- 2 Cups Chicken Stock
- 8 Sliced Ounces Mushroom
- 1/2 Tbp Pepper
- Salt
- 1 Tbp Oregano
- 1 Tps Basil
- 1 Tbp Rosemary
- 1 Tbp Worcestershire Sauce
- 4 Thinly Sliced Potato
Blueberry Muffins
Recipe Name :Blueberry Muffins
Preparation Time : Less then 15 mins
Cooking Time : 50 to 60 mins
Ingredients:
- 1/4 c. butter
- 1 c. sugar
- 2 c. flour
- 1/2 tsp. salt
- 2 eggs
- 1/2 c. milk
- 1 tsp. vanilla
- 2 tsp. baking powder
- 2 1/2 c. blueberries
- 2 tsp. sugar
Method:
- On low speed cream butter and sugar until fluffy.
- Add eggs one at a time and mix until blended. Sift dry ingredients and add alternately with milk.
- Add vanilla. Mash 1/2 cup blueberries. Stir in by hand.
- Add rest of berries whole and stir by hand.
- Grease muffin tins well with butter and grease top surface of pans, as well. Pile mixture high in each muffin cup. S
- prinkle sugar over tops.
- Bake in preheated 375 degree oven for 30 minutes.
- Cool in pan at least 30 minutes.

Buckwheat Crepes
Recipe Name: French Onion
Preparation Time: Less then 15 mins
Cooking Time : 2 hours
Ingredients:
- 1 c Water
- 1 c Milk
- 3 Eggs
- 1/2 c Buckwheat flour
- 2/3 c White flour
- 1/2 ts Salt
- 3 tb Melted butter
Method:
Making batter using blender
Put all ingredients into a blender jar in order given, and blend briefly at medium speed. Stop and scrape down the sides of the blender jar; then blend for another 5 seconds or so. Pour out the batter into a bowl, cover and let rest for 1 hour before using.
Making Batter by Hand
Beat the eggs slightly add milk, water, salt and melted butter, then gradually whisk in flours. Pour the batter through a strainer and let sit for 1/2 hour before using.
For Crepes
Melt a little butter in a crepe pan and cook. As buckwheat has an enormous capacity to absorb liquid, you might find it necessary to thin the batter more milk or water.
