Chicken Pie

Recipe name :Chicken Pie

Preparation Time : Less then 30 Mins

Cooking Time : 1:30 Hour

Ingredients:

  • 1½ lbs. skinless, boneless chicken breast
  • One 14.5 oz. can peas and diced carrots
  • One 10¾ oz. can condensed cream of chicken soup
  • 1 medium onion, finely chopped
  • 2 Tbs. Worcestershire sauce
  • ¼ tsp. each of salt
  • 1/4 garlic powder
  • 1/4  ground, black pepper
  • 1/4  celery salt
  • 9″ pie crust, top and bottom
  • Oil

Method:

  1. Cover the bottom of a large skillet with oil and bring it to medium-high heat. Season the chicken breasts well with the salt, garlic powder and black pepper, then brown them a few minutes on both sides in the pan.
  2. While the chicken browns, dice the onion. Remove the chicken from the skillet to a side plate after it’s nicely browned and allow it to cool off a bit.
  3. sauté the onion in the browned chicken drippings left in the pan until caramelized over medium-low heat.
  4. While the onion browns, dice the cooled chicken meat into 1″- 1½”cubes. After the chicken is cubed and the onion is nicely caramelized, place all remaining ingredients (except of course for the pie-crust dough) in the skillet and simmer the mixture gently for about six to ten minutes over medium heat, just to warm it through really well and to mingle all the flavours together.
  5. Place your first pie shell in a compatibly-sized pie tin or glass pie baking dish, and transfer the warmed mixture into it.
  6. Cover with a second pie layer of shell, trim edges neatly of excess dough with a knife and pinch edges together to seal in the meat filling. Brush the top of the pie shell with a little olive oil (or egg wash) and cut four or five decorative slits in the top so the pie is able to vent while baking.
  7. Bake in a pre-heated oven at 400 degrees F. for approximately 30 minutes, or until the crust is golden.

Whisky Chicken

Recipe Name :Whisky Chicken

Preparation Time : Less then 30 mins

Cooking Time : 1 Hour

Ingredients:

  • One 2 1/2 to 3 lb fryer (chicken), cut up
  • 1 c Whiskey
  • 2 tb Butter
  • 3 c Sliced mushrooms (8 oz)
  • 1/4 c Sliced leeks or gr onions
  • 1/2 c Light cream or milk
  • 1 tb Lemon juice
  • 2 tb Flour
  • 2 tsp Whiskey

Method :

  1. Rinse the chicken pieces; pat dry with paper toweling. Season chicken with salt and pepper. In skillet brown chicken in butter 15 minutes, turning to brown evenly. Add the 1 cup whiskey to skillet; cover and simmer 30 to 35 min or till chicken is tender. remove chicken to serving platter and keep warm.
  2. For Sauce:
  3. Skim fat from pan juices. Add enough water to juices, if necessary, to measure 2/3 c liquid. Return to skillet. Stir in mushrooms and green onions. Cook and stir just until onions are tender. Combine cream and flour; add to mixture in skillet. Cook and stir until thick and bubbly. Cook and stir one minute more. Remove from heat; stir in lemon juice and the 2 teas. whiskey. Spoon over chicken. Serve with cooked peas and leeks if desired.

Kuku Paka

Recipe Name :Kuku Paka

Preparation Time : Less then 40 Mins

Cooking Time : 2 Hours

Ingredients :

  • 3 spoonfuls cooking oil or butter
  • 1  finely chopped Onion
  • 2   chopped bell papers
  • 1 garlic, minced
  • 1/2  teaspoon ground ginger
  • 1 teaspoon curry powder
  • a few whole cloves
  • 1 teaspoon salt
  • 1 chicken, cut into small serving-sized pieces
  • 1 cup water
  • 4  potatoes, cleaned and cut into quarters
  • 3  ripe tomatoes, cut into chunks
  • 2  cups coconut milk
  • fresh cilantro or parsley, chopped
  • 1 tablespoon lemon juice

Method :

  1. Heat the oil in a large pot or dutch oven. Over high heat fry the onions and green peppers for a few minutes, stirring constantly Stir in the minced garlic and fry for a minute longer. Add the spices and salt and mix well.
  2. Add the chicken to the pot. (Add another spoonful of oil if necessary to keep chicken from sticking.) Brown the chicken pieces on all sides. Remove chicken and set aside.
  3. Add the water to the pot and bring to a slow boil. Add the potatoes and cook them until they begin to become tender. Return the chicken to the pot and continue to cook at a low boil, stirring occasionally, until the chicken and potatoes are done.
  4. Stir in the tomatoes and cook for a few minutes more. Then add the coconut milk, reduce heat, and gently stir and simmer until sauce is thickened. Stir in the lemon juicec. Garnish with the fresh coriander leaves or parsley immediately before serving.

Chicken Pie

Cooking Time : 2 Hours

Ingredients :

  • 5-lb  roasting hen
  • 1 peeled and quartered Onion
  • 6  allspice
  • cloves
  • 1/4 tsp. mace
  • 1 tsp. salt
  • 6 peppercorns
  • 1/2 lb. Ham (cubed)
  • 3 cups water
  • 1/2 cup white wine
  • 1/4 cup cream of Wheat
  • 2 egg yolks
  • 2 tbls. lemon juice
  • 2 hard-boiled eggs (sliced)
  • 1 recipe puff pastry (see below)
  • 1 egg – beat with 1 tbls.
  • water

Method:

  1. In a large pot or dutch oven, place Chicken, Onion, allspice, cloves, mace, salt and peppercorns. Add 3 cups of water and bring all to a boil. Lower the heat, cover and simmer until tender – one to two hours. Then place Chicken on a platter to cool. Strain out spices and save 3 cups chicken stock. When Chicken is cool, debone Chicken and cut into 1-inch pieces and throw the skin away. Next, make sauce as follows: Add wine to chicken stock, bring to a boil and slowly add cream of Wheat. Reduce heat to low, stir constantly until thickens. In a small bowl, mix together egg yolks and lemon juice. Stir 3 to 4 tbls. of sauce into yolks and then add yolk mixture to sauce. Bring to a boil for one minute. Then remove from heat.
  2. Place 1/2 deboned Chicken in a baking dish, scatter chopped Ham on top, then place a row of egg slices. Redo above and then pour sauce over the two layers.
  3. Make top puff pastry as follows: Cut 1/4 lb. sweet butter into two cups of flour until it is the consistency of pie dough. Add 4 to 6 tbls. water and knead into a ball. flour a board and roll out with a floured rolling pin as you would pie dough. Place on top of baking dish and pinch edges. Brush top with water and egg mixture. Bake at 400 degrees for 15 minutes, reduce heat to 350 degrees and bake for 45 minutes.

Fufu and Pepper Soup

Recipe Name: Fufu and Pepper Soup

Preparation Time : 10 to 20 Mins

Cooking Time :30 mins

Ingredients:

  • 1 pig foot
  • 1 lb stewing beef
  • 2 lbs soup bones
  • 1 lb shrimp (with shells)
  • 3 crabs (cleaned and cut in half)
  • 1 large onion (chopped)
  • 1 1/2 C whole okra
  • 2 tsps salt
  • 3 tsps seasoned salt
  • 1 tsp ground black pepper
  • 1 or 2 Tbs tomato paste
  • 1 pod of orange habenero hot pepper
  • 2 bonnies
  • 1 piece dried fish (about 2 inches)
  • 1 piece dried meat (about 2 inches)
  • 2 Maggi chicken soups (optional)
  • 3 bitter balls
  • 1 large Orange (see Tips)
  • Fufu

Preparation:

Cut the pig foot into 6 pieces. Wash and boil separately until soft. Rinse off and set aside.

Cut stewing beef and soup bones into 1 inch pieces. Peel bonnies and remove bones. Break into small pieces. Wash and cut dried fish into 1 inch pieces. Clean crab, remove back shell, and break each in two pieces.

Combine pig foot, beef, soup bones, bonnies, crabs, shrimp, dried fish, and dried meat in a pan and wash.

Add 1 tsp salt, 1/2 tsp black pepper, and 2 tsp seasoned salt. Stir to spread seasoning evenly. Let sit for 20 minutes.

Slice onion. Chop up your hot pepper finely. Cut your bitter boils into quarters. Cut ends from okras.

Transfer all ingredients to as 8 quart pot. Add water to pot so that it is 3/4 full (two inches from the top).

Add tomato paste, 1 tsp of seasoned salt and 1/2 tsp of black pepper.

Taste your soup. Add 1 more tsp of salt according to taste. Add one or two Maggi cubes if desired.

Bring soup to a boil on high. Reduce heat to medium high. Half-cover pot and boil slowly until the soup is dry and the pot is 1/2 full.
