Spicy Liver

Recipe Name : Spicy liver

Preparation Time : Less then 10 mins

Cooking Time  : Up to 45 mins

Ingredients:

  • 250 gms mutton liver
  • 1/2 tsp red chilli powder
  • 1/2 tsp black peppers, roughly ground
  • 1/2 cup fresh coriander leaves
  • 1 cup oil
  • 1/2 tsp cumin powder
  • 1 tsp ginger and garlic paste
  • 1 tsp lemon juice
  • 4 green chillies
  • Salt to taste

Method:

  1. Heat oil in a pan, fry liver with ginger/garlic paste and add the spices along with lemon juice.
  2. Remove from heat as oil separates from the gravy, otherwise the meat will become hard.
  3. Garnish with green chillies and coriander leaves.

Tamarind beef

Recipe Name :Tamarind beef

Preparation Time : up to 15 mins

Cooking Time : 1  Hour

Ingredients:

  • 750 gms pre-cooked boneless beef, cut into one inch cubes
  • 125 gms tamarind
  • 1 tsp cumin seeds
  • 1 tsp all spices
  • 1 tsp coriander seeds
  • 1 tbsp coriander leaves, chopped
  • 1 tsp mustard seeds
  • 1 tbsp icing sugar
  • 1 tbsp ginger/garlic paste
  • 1 onion chopped
  • 1/2 tsp salt
  • 2 tbsp tomato paste
  • 2 tbsp oil
  • 2 green chillies, deseeded and sliced
  • 2/3 cup water
  • 4 curry leaves

Method:

  1. Soak the tamarind overnight in water. Strain it and save the liquid.
  2. Put tamarind, tomatopaste, icing sugar, ginger/garlic paste, salt and onion into a blender and mix to a smooth puree.
  3. Heat oil in a wok, add cumin and coriander seeds, mustard seeds and curry leaves; cook until the spices start popping.
  4. Stir the beef cubes into the spices and fry for four minutes until the meat is brown.
  5. Add chillies, all spices, tamarind mixture and reserved tamarind liquid and cook for 25 minutes.
  6. Garnish with coriander leaves.

Roghan josh

Recipe name : Roghan Josh

Preparation Time: 20 mins

Cooking Time : 1:30 Hour

Ingredients:

  • 1/4 cup yoghurt
  • 1 tsp salt
  • 1 bay leaf
  • 1 onion, chopped
  • 1 kg boneless beef, cut into one inch cubes
  • 1 tbsp ginger/garlic paste
  • 1 inch long cinnamon stick
  • 1/4 tsp all spices
  • 2/3 cup hot water
  • 2 tsp coriander powder
  • 2 tsp cumin seeds
  • 2 tbsp oil
  • 4 red chillies, chopped
  • 4 cardamoms
  • 4 cloves
  • Black pepper for taste

Method:

  1. Heat oil in a large casserole and fry the meat in batches.
  2. Remove from heat and set aside in a bowl.
  3. Fry chopped onions in the same oil and stir over high heat for four minutes.
  4. Grind together chillies, cardamoms, cloves and cumin. Add the spice paste, ginger/garlic paste, coriander powder and bay leaf, stir until fragrant.
  5. Add meat to the paste, gradually stir in the yoghurt keeping the sauce simmering.
  6. Add in the cinnamon stick, hot water and pepper to taste. Cover and cook in a preheated oven, for one and a half hours until the meat is tender and the sauce is reduced.
  7. Discard the cinnamon stick and add in all the spices.

Goan fish

Recipe Name:Goan fish

Preparation Time : Less then 15 mins

Cooking Time : 45 mins

Ingredients:

  • 500 grams pomfret
  • 1 onion
  • 1 small tomato
  • 3 green chillies
  • ½ cup coconut milk
  • 8 red chillies
  • 1 tbp coriander seeds
  • ½ tbp cumin seeds
  • ½ tbp chopped ginger
  • ½ tbp chopped garlic
  • ½ tbp tamarind paste
  • ½ tbp turmeric
  • 1 tbp oil
  • salt

Method:

  1. Make  slice of fish.
  2. Finely chop the onion and tomato each separately. Slit the green chillies and remove all the seeds.
  3. Rub some salt and turmeric into the fish and keep it aside for a while. This will help in beating the foul smell of the fish.
  4. Wash it well and then drain the water completely. Take a blender and add the coriander seeds, turmeric powder, tamarind paste, garlic, ginger, cumin seeds, red chillies into a fine paste.
  5. Take a pan and pour the oil.
  6. Bring to heat and add the onions. When the onions are golden brown add the paste and tomatoes.
  7. Sauté briefly and add the coconut milk and water as desired.
  8. Let it boil and then put in the fish, green chillies and salt to taste. Now stir well and cook on a low flame for five to six minutes.
  9. Ensure that the fish should be cooked and still firm.

Fried mackerels

Recipe name :Fried mackerels

Preparation Time: Less then 10 mins

Cooking Time :45 mins

Ingredients:

  • 500 grams pomfret
  • banana leaves
  • 4 tbp lemon juice
  • ½ cup grated coconut
  • ½ cup chopped coriander leaves
  • 4 green chillies
  • ½ tbp coriander seeds
  • 2 tbp cumin seeds
  • 1 tbp chopped garlic
  • salt

Method:

  1. Make horizontal cuts in the fish fillet making small pockets. Rub some salts into the fish fillet and then pour some lemon juice in it. Let it marinate for an hour.
  2. Take a blender and put the grated coconut, coriander leaves, green chillies, coriander seeds, cumin seeds, garlic, 1 tablespoon lemon juice and salt to taste. Blend all these ingredients into a fine paste.
  3. Apply this paste on the fish and let it marinate for half an hour.
  4. Take the banana leaves and place a fish inside it. See to it that there should be enough marinade in and around the fish.
  5. Wrap up each leaf with a fish inside and set it on a steamer.
  6. Steam this for about 25 minutes.
  7. Just before serving only remove from the wrap and garnish with lemon slices and serve.
