Fish Fingers

Recipe Name :Fish Fingers

Preparation Time : 15 mins

Cooking Time : 1 Hour

Ingredients:

  • 1 pound frozen fish fillets, partially thawed
  • 1/2 cup seasoned bread crumbs
  • 2 tbs grated Parmesan cheese
  • 1 tbs minced fresh parsley
  • 1 tsp grated lemon peel
  • 1/4 tsp garlic salt
  • 1/2 cup 1% buttermilk
  • 1/4 cup plus 2 tbs all-purpose flour

Method:

  1. Cut fillets into 3/4 inch strips; set aside.
  2. In a shallow bowl, combine the bread crumbs, Parmesan cheese, parsley, lemon peel and garlic salt.
  3. Place buttermilk in another shallow bowl and flour in a third bowl.
  4. Coat fish strips with flour; dip into buttermilk, then coat with crumb mixture.
  5. Place on a baking sheet coated with nonstick cooking spray.
  6. Refrigerate for 20 minutes.
  7. Bake at 425 degrees for 15-20 minutes or until fish flakes easily with a fork.
  8. Let stand for 2 minutes before removing from baking sheets.

Steamed Chicken

Recipe Name :Steamed Chicken

Preparation Time : Less then 20 mins

Cooking Time : 1 Hour and 20 mins

Ingredients:

  • 1-1/2 kg chicken, cut into eight pieces
  • 2 tsp red chilli powder
  • ¼ cup dried plum
  • 3 tbsp vinegar
  • 1-1/2 tbsp lemon juice
  • 2 cups yoghurt
  • 3-4 green chillies chopped
  • 2 tsp all spices
  • Salt
  • 1-1/2 tsp cumin seed ground and roasted
  • Oil for frying

Method:

  1. Make slits in chicken pieces and marinate them with salt and vinegar.
  2. Set them aside for an hour.
  3. Heat oil and deep-fry the chicken till golden brown.
  4. Mix all the ingredients and rub it thoroughly all over the chicken pieces.
  5. Steam them in a double boiler over medium heat for an hour.
  6. Serve with tomato ketchup and French fries.

Cajun Stewed Corn

Recipe Name:Cajun Stewed Corn

Preparation Time : Less then 20 mins

Cooking Time :30 mins

Ingredients :

  • 2 cups fresh or frozen corn kernels
  • 1/4 cup chopped bell pepper
  • 1/4 cup chopped white onion
  • 5 ripe cooking tomatoes or 2 large cans Muir
  • fire roasted tomatoes with basil
  • sea salt
  • white pepper
  • 2 fresh basil leaves

Method:

Mix  all  ingredients  in  a small stock  pot.  Bring  to  a  boil, cover,  and  simmer  until  corn  is tender, about  15  minutes. Serve  over  natural,  steamed, brown  rice

Yakitori

Recipe Name: Yakitori

Preparation Time: Less then 15 mins

Cooking Time: 1 Hour

Ingredients:

  • Chicken thighs: without bone and skin
  • Japanese leek  leek, or green onion
  • Soya sauce
  • Mirin
  • Sugar
  • Honey or maple syrup
  • Small wooden spears

Method:

Mix together 4 tablespoons of soya sauce, 3 tablespoons of sugar, a little bit of honey or maple syrup, a little bit of mirin and water, and heat it up until it’s homogenous.

Cut the chicken thighs into about 3×2x2cm large pieces.

Put the chicken pieces into the already prepared sauce, and let it stand for a while.

Cut the leek or green onions in about 3 cm long pieces.

Spear three or four pieces of chicken and some leek on each wooden stick.

Grill them, or use the oven at 200 degrees celsius. (You may want to wrap the wooden sticks with aluminium foil; otherwise, they may burn off.)

Currant Squares

Recipe Name :Currant Squares

Preparation Time : Less then 30 Mins

Cooking Time : 30 to 60 Mins

Ingredients:

Flaky Pastry

  • 140 grams/ 5 ounces firm butter or margarine, grated
  • 175 grams/ 6 ounces flour
  • pinch salt
  • iced water

Filling

  • 110 grams/ 4 ounces butter
  • 80 grams/ 3 ounces sugar
  • 225 grams/ 8 ounces currants

pinch spice

  • 1 lemon, rind and juice
  • 1 large apple, grated
  • 1 slice bread, crumbled

Method:

Freeze butter or margarine for half an hour before grating.  Sift flour and salt, then add butter or margarine.  Mix into flour with palette knife.  Add iced water until a dough is formed. Wrap and chill in fridge. Put all filling ingredients into a saucepan and bring to boiling point. Set aside to cool. Preheat oven to gas mark 6/ 200°C/ 400°F. Roll out half the pastry very thinly and line a Swiss roll tin. Pour on currant filling, spreading evenly, then cover with the rest of the pastry. Glaze with egg or milk and bake for 30 minutes or until light gold in color. Dust with caster sugar and cut into squares when cool. Makes 20
