Fish Fingers
Recipe Name :Fish Fingers
Preparation Time : 15 mins
Cooking Time : 1 Hour
Ingredients:
- 1 pound frozen fish fillets, partially thawed
- 1/2 cup seasoned bread crumbs
- 2 tbs grated Parmesan cheese
- 1 tbs minced fresh parsley
- 1 tsp grated lemon peel
- 1/4 tsp garlic salt
- 1/2 cup 1% buttermilk
- 1/4 cup plus 2 tbs all-purpose flour
Method:
- Cut fillets into 3/4 inch strips; set aside.
- In a shallow bowl, combine the bread crumbs, Parmesan cheese, parsley, lemon peel and garlic salt.
- Place buttermilk in another shallow bowl and flour in a third bowl.
- Coat fish strips with flour; dip into buttermilk, then coat with crumb mixture.
- Place on a baking sheet coated with nonstick cooking spray.
- Refrigerate for 20 minutes.
- Bake at 425 degrees for 15-20 minutes or until fish flakes easily with a fork.
- Let stand for 2 minutes before removing from baking sheets.
Steamed Chicken
Recipe Name :Steamed Chicken
Preparation Time : Less then 20 mins
Cooking Time : 1 Hour and 20 mins
Ingredients:
- 1-1/2 kg chicken, cut into eight pieces
- 2 tsp red chilli powder
- ¼ cup dried plum
- 3 tbsp vinegar
- 1-1/2 tbsp lemon juice
- 2 cups yoghurt
- 3-4 green chillies chopped
- 2 tsp all spices
- Salt
- 1-1/2 tsp cumin seed ground and roasted
- Oil for frying
Method:
- Make slits in chicken pieces and marinate them with salt and vinegar.
- Set them aside for an hour.
- Heat oil and deep-fry the chicken till golden brown.
- Mix all the ingredients and rub it thoroughly all over the chicken pieces.
- Steam them in a double boiler over medium heat for an hour.
- Serve with tomato ketchup and French fries.
Vegetable Roti
Recipe Name :Vegetable Roti
Preparation Guide : Less then 10 mins
Cooking Time : 20 mins
Ingredients:
- 1/4 Cup peanut oil
- 2 Small zucchinis, cubed into 1/2 inch pieces
- 2 Peeled medium all purpose potatoes, cooked and cubed into 1/2 inch pieces
- 4 Scallions cut into thin rings
- 1 Scotch Bonnet pepper minced finely
- 1/2 cup baby peas
- 1/2 cup baby sweet corn
- 1 1/2 tbp Madras curry powder
- 1 large tomato, coarsely chopped
- 4 Cups baby spinach
- 2 Tbp water
- 1/4 Cup plain yoghurt
- Zest of 1 lime
- Salt
- freshly ground pepper to taste
- 4 roti breads, warmed
- Cilantro sprigs
- Mango Chutney
Method:
- In a large, deep skillet, heat the penaut oil. Add the zucchini,potatoes, scallions and pepper and season with salt and pepper.
- Cook over high heat, stirring occasionally, until the vegetables are just tender and lightly browned, about 4 minutes.
- Add the peas, sweetcorn and curry and cook over moderate heat, stirring, for 5 minutes.
- Add the tomato and spinach and cook, stirring occasionally, until the spinach is wilted and the tomato is just beginning to soften, about 3 minutes.
- Add the water and lime zest and scrape up any browned bits stuck to the skillet.
- Season the vegetables with salt and pepper and stir in the yoghurt. Stuff the roti bread with the vegetables, garnish with the cilantro sprigs or Mango Chutney and serve immediately.
Fried mackerels
Recipe name :Fried mackerels
Preparation Time: Less then 10 mins
Cooking Time :45 mins
Ingredients:
- 500 grams pomfret
- banana leaves
- 4 tbp lemon juice
- ½ cup grated coconut
- ½ cup chopped coriander leaves
- 4 green chillies
- ½ tbp coriander seeds
- 2 tbp cumin seeds
- 1 tbp chopped garlic
- salt
Method:
- Make horizontal cuts in the fish fillet making small pockets. Rub some salts into the fish fillet and then pour some lemon juice in it. Let it marinate for an hour.
- Take a blender and put the grated coconut, coriander leaves, green chillies, coriander seeds, cumin seeds, garlic, 1 tablespoon lemon juice and salt to taste. Blend all these ingredients into a fine paste.
- Apply this paste on the fish and let it marinate for half an hour.
- Take the banana leaves and place a fish inside it. See to it that there should be enough marinade in and around the fish.
- Wrap up each leaf with a fish inside and set it on a steamer.
- Steam this for about 25 minutes.
- Just before serving only remove from the wrap and garnish with lemon slices and serve.
Chermoula Sauce
Recipe Name:Chermoula Sauce
Preparation Time: Less then 15 mins
Cooking Time :20 mins
Ingredients :
- 4 cloves garlic, peeled
- 1 tbs salt
- 2⁄3 cup finely chopped fresh cilantro
- 1⁄3 cup finely chopped parsley
- 1½ tbs sweet paprika
- ½ tbs ground cumin
- 1⁄8 tbs cayenne pepper
- 2 tbs freshly squeezed lemon juice
- ¼ cup olive oil
Method:
- Place the garlic and salt in a food processor and process to combine.
- Add the cilantro, parsley, paprika, cumin, pepper, and lemon juice.
- Process for 1 minute. Add the oil and process for another minute.
