Maahi Kabab
Recipe name :Maahi Kabab
Preparation Time : Less then 20 mins
Cooking Time : 1 :45 hour
Ingredients:
- 1 whole salmon or cod fish
- 1/2 cup extra-virgin olive oil
- 1/ cup fresh lime juice
- 50 grams coriander
- 1/2 tsp saffron
- 50 grams parsley
- 50 grams fresh mint
- 1/2 tbs salt
- 1/4 tsp black pepper
Method:
- Cut fish length-wise from below. Remove insides, then wash inside and out, and dry thoroughly.
- Place each side under grill at high temperature for 5-10 minutes so that the skin dries up. Remove fish and separate skin which should come off easily.
- Prepare sauce as following: wash and finely chop coriander, parsley and mint. Add lime juice, olive oil, saffron, salt, and black pepper, and mix well. Cover a suitable pan with aluminum foil and place fish on top.
- Add the sauce on both sides as well as inside.
- Cover with a sheet of aluminum foil and cook in oven at medium temperature for 45 minutes to one hour.
Note : However, the exact cooking time depends on the type and size of fish. Take care not to over-cook. Add more sauce 2 or 3 times during cooking. When cooked, decorate fish with slices of lime or lemon and some parsley.
Spicy Liver
Recipe Name : Spicy liver
Preparation Time : Less then 10 mins
Cooking Time : Up to 45 mins
Ingredients:
- 250 gms mutton liver
- 1/2 tsp red chilli powder
- 1/2 tsp black peppers, roughly ground
- 1/2 cup fresh coriander leaves
- 1 cup oil
- 1/2 tsp cumin powder
- 1 tsp ginger and garlic paste
- 1 tsp lemon juice
- 4 green chillies
- Salt to taste
Method:
- Heat oil in a pan, fry liver with ginger/garlic paste and add the spices along with lemon juice.
- Remove from heat as oil separates from the gravy, otherwise the meat will become hard.
- Garnish with green chillies and coriander leaves.

Jooje Kabab
Recipe Name :Jooje Kabab
Preparation Time : Less then 15 mins
Cooking Time : 45 mins
Ingredients :
- 1 kg chicken
- 1/2 cup extra-virgin olive oil
- 2 large onions
- 1/4 tsp saffron
- 4 medium tomato
- 1/2 tsp salt
- 2 tbs fresh lime juice
- 1/4 tsp black pepper
Method:
- Mix olive oil, grated onions, saffron, salt, black pepper and lime juice. Wash and cut chicken into small pieces, then remove the skin.
- Marinate overnight (or at least for several hours) in refrigerator.
- The container should be covered. Thread chicken on long, thin metal skewers.
- Thread leg and thigh pieces, wings and breast pieces separately, as breast requires slightly less cooking. Also thread whole tomatoes separately on another skewer. Brush with marinade.
- Barbeque for about 5-10 minutes on each side, turning frequently. Joojeh Kabab can also be prepared in the oven.
- Prepare chicken as before, pre-heat the grill to a high temperature, and place just under the grill, again turning frequently.
Minty beef kebabs
Recipe Name :Minty beef kebabs
Preparation Time : 20 mins
Cooking Time : 1 Hour
Ingredients:
- 1 1/2 cup minced beef
- 1 onion, chopped
- 3 cardamoms
- 1 tbsp ginger/garlic paste
- 2 tbsp mint leaves, chopped
- 2 tsp coriander seeds
- 2 tsp cumin seeds
- 3 cloves
- 6 black peppers
- 1/2 tsp salt
Method:
- Pre-heat pan and fry coriander, cumin, cloves, cardamom and black pepper until they turn a shade darker and release a roasted aroma.
- Grind the spices. In a bowl mix ginger/garlic paste, minced meat, ground spices, mint leaves, onion and salt.
- Make kebab in sausagelike shapes and put on skewers.
- Barbecue over a pre-heated grill for 15 minutes, turning the skewers occasionally.

Tamarind beef
Recipe Name :Tamarind beef
Preparation Time : up to 15 mins
Cooking Time : 1 Hour
Ingredients:
- 750 gms pre-cooked boneless beef, cut into one inch cubes
- 125 gms tamarind
- 1 tsp cumin seeds
- 1 tsp all spices
- 1 tsp coriander seeds
- 1 tbsp coriander leaves, chopped
- 1 tsp mustard seeds
- 1 tbsp icing sugar
- 1 tbsp ginger/garlic paste
- 1 onion chopped
- 1/2 tsp salt
- 2 tbsp tomato paste
- 2 tbsp oil
- 2 green chillies, deseeded and sliced
- 2/3 cup water
- 4 curry leaves
Method:
- Soak the tamarind overnight in water. Strain it and save the liquid.
- Put tamarind, tomatopaste, icing sugar, ginger/garlic paste, salt and onion into a blender and mix to a smooth puree.
- Heat oil in a wok, add cumin and coriander seeds, mustard seeds and curry leaves; cook until the spices start popping.
- Stir the beef cubes into the spices and fry for four minutes until the meat is brown.
- Add chillies, all spices, tamarind mixture and reserved tamarind liquid and cook for 25 minutes.
- Garnish with coriander leaves.
Tamarind beef is Ready.
