Winter Melon Soup
Recipe Name : Winter Melon Soup
Preparation Time: 5 mins
Cooking Time : 2 mins
Ingredients:
- 400 grm Winter melon
- 4 – 5 slices Ginger
- 1 Green onion
- 1 – 1½ tsp Salt
- ½ tsp White pepper powder
- ¼ tsp MSG
- 6-8 Szechuan peppercorns
- 2 tsp Sesame oil
- 2 cups Water
Method:
- Cut the winter melon into 3 – 4cm squares that are 1cm thick. Finely chop the green onion.
- Add salt, white pepper powder, MSG, peppercorn, and ginger to the water, and bring to a boil.
- When boiling, add the winter melon. Boil until the winter
melon is completely soft, and dish up. - Sprinkle green onions on top, and also spread the sesame oil
on top.
Winter Melon Soup is ready.

Chinese Cabbage and Tomato Tofu Soup
Recipe Name: Chinese Cabbage and Tomato Tofu Soup
Preparation Time : 5 mins
Cooking Time : 5 mins
Ingredients :
- 350g Tofu
- 1 Tomato
- 3 leafs of Chinese cabbage
- 1 Green onion
- 4-6 Ginger slices
- ½ tsp MSG
- 1 tsp Salt
- 1 tsp Sesame oil
- 2 ½ – 3 cups Water
- 1 tbs Vegetarian broth mix powder
Method:
- Cut tofu into 1cm cubes.
- Cut tomato into 6 to 8 wedges.
- Cut Chinese cabbage into 1in x ½ in pieces.
- Finely dice the green onions.
- Boil the water in a pot, and add the broth mix, MSG, salt, ginger slices, and peppercorns.
- Bring water to a boil. Then add in tofu and tomato wedges.
- Bring to a boil again. Then add in the Chinese cabbage.
- Bring this to a boil again, and let it boil for about 20 to 30 seconds.
- Dish up, spread the green onions on top, and spread the sesame oil over the soup.
Chinese Cabbage and Tomato Tofu Soup is ready.

Jooje Kabab
Recipe Name :Jooje Kabab
Preparation Time : Less then 15 mins
Cooking Time : 45 mins
Ingredients :
- 1 kg chicken
- 1/2 cup extra-virgin olive oil
- 2 large onions
- 1/4 tsp saffron
- 4 medium tomato
- 1/2 tsp salt
- 2 tbs fresh lime juice
- 1/4 tsp black pepper
Method:
- Mix olive oil, grated onions, saffron, salt, black pepper and lime juice. Wash and cut chicken into small pieces, then remove the skin.
- Marinate overnight (or at least for several hours) in refrigerator.
- The container should be covered. Thread chicken on long, thin metal skewers.
- Thread leg and thigh pieces, wings and breast pieces separately, as breast requires slightly less cooking. Also thread whole tomatoes separately on another skewer. Brush with marinade.
- Barbeque for about 5-10 minutes on each side, turning frequently. Joojeh Kabab can also be prepared in the oven.
- Prepare chicken as before, pre-heat the grill to a high temperature, and place just under the grill, again turning frequently.
Doner Kebab
Recipe Name :Doner Kebab
Preparation Time: Less then 20 mins
Cooking Time : 45 mins
Ingredients:
- 1 1/2 kg.’s leg of lamb
- 1 50 gram. salt
- 50 gr. black pepper
- 2 kg’s lamb fat, ground
- 1 egg,
- 1 liter onion juice
- 1 cup of olive oil

Method:
- Remove any bits of skin and bone from the meat.
- Cut into serving-size pieces.
- Pound with a meat tenderizer or the edge of a heavy saucepan until 1/8 cm. thick. Trim.
- Prepare a marinade of onion juice, olive-oil, salt and pepper, and soak meat in the marinade. Spread over each piece of meat the lamb fat, and ground lamb mixed with an egg.
- Thread pieces of meat on a long skewer, starting with the larger pieces. Trim the chunk of meat on the skewer and add trimmings to the end of skewer.
- The chunk of meat is broiled in the “Doner Kebab” broiler, made especially for the purpose.

Kabab Koobideh
Recipe Name: Kabab Koobideh
Preparation Time : Less then 20 mins
Cooking Time : 45 mins
Ingredients:
- 500 grams ground lamb or beef
- 2 large onions
- 1 large egg
- 4 medium tomatoes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Method:
- Mix meat, onions, egg, saltPress the meat around long, thick metal skewers and shape evenly.
- Thread whole tomatoes on another skewer.
- Barbeque each side for about five minutes, turning frequently.
- If skewers are not available or barbequing is not possible, kabab-e koobideh can be shaped into long, thin portions on aluminum foil and grilled at high temperature in the oven.
- The oven should be pre-heated and kabab-e koobideh should be placed as high as possible near the source of the heat.
Kabab Koobideh is ready.
